Totally backed up with extensive caveats buried in the legalese and contractual fine print.

The answer simply narrows down to doing lots of research on potential candidate companies. Talk to as many existing customers as you can. Those listed as references and others who may not be. Listen to what is said and not said.

Have your company's lawyer's read the contractual agreements and terms.

Good starting point is to make a detailed list of the cloud hosting support requirements. Quantify those requirements as much as you can and specifically as you can.

I.e., cloud goes "down". Do you want/require full recovery within X number of hours? Does that apply 24/7?

Establish your requirements, contact potential companies, ask questions, study their responses.
